Roast Beef with Coffee

After messing around, it hit me to come up with a recipe for coffee aficionado! There’re plenty of desserts made with coffee, even treats, and snacks. Why not a meal! When cooking with coffee, any meat won’t do the job. Beef rules the universe when it comes to cooking with coffee.

Ingredients

  • 3-5 pounds roast beef (any cut)

  • garlic or onion slivers

  • 1 cup vinegar

  • 2 tablespoons salad oil

  • 2 cups black coffee

  • 2 cups water

  • salt and pepper

Directions

  1. Use a large knife to cut slits completely through the meat.

  2. Insert slivers of garlic down into the slits.

  3. Pour vinegar over meat, making sure it runs down into the slits.

  4. Marinate in the refrigerator for 24-48 hours.

  5. When ready to cook, place in a big heavy pot and brown well on all sides in oil.

  6. Cover with coffee and water.

  7. Simmer covered on top of stove 2 to 4 hours.
