Barbecue Flank Steak

Flank steak has many names, from London broil to skirt steak. No matter which name you choose to use, at the end of the day…it’s still a flank steak, which comes from the belly of the cow.

Remember, good ole’ American barbecue is a steak! Rather it’s a rib eye, porterhouse, filet mignon, flank steak, it wouldn’t matter as long as it’s a piece of tender meat on the barbecue!

Lets get cooking, Wild West Style, barbecue flank steak done right!


  • 2 pounds flank steak

  • 1 clove garlic

  • 2-3 tablespoons soy sauce

  • 1 tablespoon tomato paste

  • 1 tablespoon oil

  • 1/4 teaspoon pepper

  • 1/2 teaspoon salt


  • Score flank steak diagonally on both sides

  • combine remaining ingredients in a blender until smooth.

  • Pour sauce over steak and marinate overnight,

  • Broil 4-7 minutes on each side over hot coals


Combine the following and mix well. Use as a marinade over flank steak and cook as above.

  • 3/4 cup oil

  • 1/2 cup soy sauce

  • 2 tablespoons vinegar

  • 2 tablespoons honey

  • 1 1/2 teaspoons ginger

  • 1 teaspoon garlic powder

  • 1 scallion with tops, finely chopped
